Pectinase has a generic term which can synergy in decompsing several enzymes of pectin substances. Main including polymethylgalacturonase(PMGL), polygalacturonase(PG), polygalacturonate lyase(PGL), pectinesterase(PE). Pectinase act on glyceridic bonds in D-galactronic acid residue of pectin, can break the pectin molecule, degrade pectin’s polysaccharides chains generates Oligogalaturonide and a few galacturonic acid small molecules, decrease the cost of products, improve the yield of juice, decrease secondary preciption, improve products quality.
